The new edition of the MICHELIN guide Spain & Portugal 2016 is ready, but will not disclose its contents until 25 November. That day the Parador Hostal dos Reis Católicos in Santiago de Compostela, will be the scenario that will be presented popularly known as “Red Guide”.

For the seventh consecutive year, Michelin organizes a gastronomic holiday which will feature the presence of journalists and food critics from major national media, both television and radio, print and online media. This time, moreover, there is a large representation of chefs, from Michelin-distinguished, common in the event, three and two stars to chefs of restaurants with a star, Bib Gourmand restaurants or other selection. Thus, Michelin wants to give visibility to establishments of all categories to highlight the importance and strength of the gastronomic basis of the Peninsula.

This act culminates with a gala dinner where you can taste served live on eight great chefs Galician dishes: Ivan Dominguez (restaurant Alborada), Luis Veira (restaurant Arbore gives Veira), Javier Olleros (restaurant Culler de Pau) Beatriz M. Sotelo and Xoán Crujeiras (restaurant A station), Xosé T. Cannas (restaurant Pepe Vieira), Nochi Garcia (restaurant Retiro da Costiña) and Yayo Daporta (Yayo Restaurant Daporta). Pepe Solla, Solla restaurant chef, is in charge of coordinating dinner.

With the decision to Santiago de Compostela take the presentation of his famous guide, Michelin wants to pay tribute to Galicia as a culinary enclave of the first order and all professionals who, with their good work, contribute to the spread of its culinary tradition, as demand for quality food tourism.
