The D.O.P Ham of Huelva is officially registered as D.O.P Jabugo
The European Commission recently published in the Official Journal of the European Union (DOUE) implementing Regulation (EU) 2017/385 approving the change of name of the Protected Designation of Origin (PDO) Ham of Huelva which, finally, it is registered as Denomination of Origin Protected (PDO) Jabugo. This Regulation shall enter into force on the 20th day following its publication and shall be binding in its entirety and directly applicable in all Member States.
As has been reported from the Ministry of Agriculture and Fisheries, Food and Environment (MAPAMA), “this registration has been possible after several years of negotiations in which the Ministry has actively collaborated with all sectors involved, to facilitate the consensus and proceed with the processing of this joint project, whose purpose is to legally protect the term Jabugo, synonymous with differentiated quality in the national and international market”.
On the other hand, the President of the Jabugo PDO Regulatory Council, Guillermo García-Palacios Álvarez, emphasized that “this project was initiated by the Municipality of Jabugo and the Regulatory Council itself, but the enormous happiness we share today is undeniable. People, livestock companies, processing companies, administrations, institutions and entities that we have made possible”.

– 1995. Recognition of the DO Ham of Huelva in Spain.
– 1998. Registry of the DOP Ham of Huelva in the European Union.
– 2008. Request for change of name DOP Jamón de Huelva by DOP Jabugo.
– 2015. Resolution favorable to the change of name by the Ministry.
– 2017. Registration of the Jabugo PDO by the Commission of the European Union.
The hams and pallets of the DOP Jabugo, present a series of specific, physical and organoleptic characteristics defined in its specification. Thus, the animals that provide the raw material must be 100% Iberian pigs, or from crosses with the Duroc breed and possess at least 75% of Iberian blood. Depending on their diet they will be commercialized, three kinds of hams and palettes: Summun; Excelens and Selection.
The production area of this Denomination is constituted by certain regions with meadows, cork oaks and cigars of the provinces of Cáceres and Badajoz in Extremadura, and Seville, Cordoba, Huelva, Cadiz, Malaga in Andalusia. The processing area corresponds to 31 municipalities of the Sierra de Huelva
According to the latest data available for 2015, there were 1,592 farms and 38 dryers. The production of pigs slaughtered for this PDO was 12,723, selling 29,608 hams and 24,603 pallets, the estimated total economic value being 9.14 million euros, distributed in 90% of the national market.
