Repetitive, but it´s a different cycle each year. The 2015 vintage in Jerez (Spain), which began unusually early, will yield some young wines-some “musts”, to use the slang magnificent locally, which will provide the perfect raw material for the next dew solera systems.
It is a commitment of the Regulatory Council put an increasing emphasis on the origin, in linking their wines with land and vineyards from which they come. It is to highlight those young wines from vineyards registered in the PDO that, according to the judgment of the Tasting Committee of the Regulatory Council -and of course tasting through ciegas- show the highest levels of excellence. In order to see the diversity that characterizes Jerez, two categories are distinguished in this contest: musts registered wineries processing and handicraft made by viñistas registered musts.
