Wild game meat: Show cooking in FITUR
The Interprofessional Association of Game Meat of Spain (ASICCAZA) organizes a Show Cooking (from 14:00 to 15:00 hours) and tasting later elaborations which made with meat. The date is January 24 at the booth of the Castilla and Leon in the FITUR fair.
The event will be led by the chefs, Juan Manuel Salgado, Spain Champion Bocuse d’Or 2015 (held in Valladolid on 27 and 28 November) and will represent Spain in the Bocuse d’Or Europe 2016 on 10 and 11 May in Hungary, and Alberto Miller, representative of Castilla and Leon in Spain last Bocuse d’Or.
The deer is one of the main products of the two dishes that participants in the culinary competition Bocuse d’Or chefs Europe highlights the increasing role that is becoming wild game meat in the gourmet segment. For the occasion, the Spanish selection of cuisine will be sponsored by ASICCAZA they provide raw material for all preparations, testing and prior to this final preparations.
ASICCAZA aims to focus on their differentiated quality, soon, will be the subject of sectoral actions to increase sales and value and place it at the same level as in other countries where it is a trend product in the catering industry and in households.
During the showcooking Sunday both the chefs prepare a deer steak tartare followed by a hot dish made of game meat.
After the session, the Inter ASICCAZA and the Spanish National Kitchen will sign a cooperation agreement for the implementation of various actions during 2016.
