Olive Oil Workshop 2016: sterols in olive oil. Santa Coloma de Gramenet

On September 8th will be celebrated the “Workshop olive oil 2016: sterols in olive oil“, organized jointly by the Institute of Agricultural Research and Technology of the Generalitat of Catalonia (IRTA), the University of Barcelona and the Department of Agriculture of the Generalitat of Catalonia. The event will be in the Campus Food Torribera UB, in Santa Coloma de Gramenet.
The program of this workshop consists of a first session, in which the current state of knowledge will be discussed, addressing the relationship with the quality and analytical aspects of sterols in olive oil, which will explain what they are and how it changes your presence, relations between agricultural practices and the quality of olive oil, and the legal and official methods of analysis are also addressed.
A second session will focus on virgin olive oils with unique content of sterols and its place in the regulations. They will be announced cases of the Cornicabra, Empeltre and Morrut varieties, and also include specialists from Australia and Italy, which will present the situation of their countries oils.
There will be finally a round table that will discuss management of diversity in the content of sterols. The workshop has a cost of 25 € and must confirm attendance by filling out the registration form.
