Advanced fat olive oil for healthier sausages and chocolates
Six Spanish companies, led by the Andalusian company Oil South-Coosur (ACESUR Group), working on the development of a new generation of advanced fats that allows to offer healthier foods by replacing highly saturated fats.
The research is part of the projects approved in the last call for funds Feder Interconnecta and is based on the development of advanced fat olive oil based on high added value. The research group plans to incorporate in the manufacture of meat and chocolates different healthy foods such as omega-3 fatty acids, aloe vera and other plant extracts in fats and oils for direct or high lipid content matrices using compounds. Thus, it is possible to substitute part of saturated fats traditionally used in the manufacture of sausages, sausages and chocolate, other heart-healthy unsaturated more and better nutritional profile.
The procedure, which will be conducted by using advanced technologies that enable micro encapsulated nutritional and technological improvements, could, these products emproporcionar final improvements in two key parameters measured by the consumer, health and pleasure. Would, on the one hand, maintain the organoleptic characteristics of the food and, on the other, give up saturated fats.
The project will last two years and will be managed by a business consortium which form part:
– Oils South-Coosur: Andalusian company leader in the production, marketing and export of olive oil, seed and table sauces.
– The Granary Healthy Food: oldest Asturias with extensive experience in the sector and related product development company saludables- chacinera The company provides the practical approach.
– Ingeniatrics: Seville-based company that develops own micro-encapsulation that enable product innovation technology solutions.
– Novadays: research and consulting company with solid experience in innovation and development in the agri-food sector.
– Citoliva: center specializing in olive oil and its components research.
– Imibic: nutritional analysis center that will verify healthy and functional effects of new products and their bioavailability.
Acesur uses the R & D for developing new products, processes and technology as well as for the use of by-products, collaborating with numerous companies, research centers and universities, which has enabled it to become an international benchmark in the development of knowledge in the field of olive oil, seed oils and sauces.
The Granary Healthy Food also works regularly in research groups to develop healthier sausages. Together with the University of Oviedo, has involved the development of suitable functional meat products in therapeutic diets and specifically in preventing colon cancer, saving up to 57% the appearance of tumors in animals that had been induced colorectal carcinoma, with a diet based on these meat products. Ingeniatrics has an R + D + i highly qualified and experienced in the food sector.
The combination of this team work with the use of a set of proprietary technologies enables versatile nutritional improvement of food by incorporating such diverse such as probiotics and / or flavors assets.
